Peel and slice melon and cut into slices. Wrap slices of Parma ham.

Mix the leaves of Arugula with olive oil, salt and pepper, add fresh lime, mix and put on a dish.

Garnish the salad with pieces of parma with melon, balsamic cream and chervil leaves. The final touch is the thin slices of Pecorino cheese.
